Fajitarogies



Okay, seriously. If you try to analyze us by our leftovers, this is what you will get: a homemade tortilla stuffed with mashed potatoes and cottage cheese, topped with pepper cheddar sauce. They were pretty good, actually. I am not sure if they would sell at a five star resort, but with some fried onions they would be great in a pub.

(The kids were not feeling adventurous today. G-man ate plain tortillas with sour cream, and the Cadet ate a tortilla and a pile of potato perogie filling on the side.)

  1. Looks good. I tried making them homemade once and I have great admiration for anyone who can because I ended up with a mess! LOL

    1. Carol, I tweaked the recipe for tortillas to take out the lard and replaced it with olive oil, with a touch of baking powder for lift. It is much, much easier that way because it rolls more like a pasta. The hardest part is to keep the boys from the kitchen while the "blue flame" is on the stove.

      As for perogies, I have been making them for as long as I can remember. My mom would enlist my brother and me to help stuff them. Thinking back, do you think it was really for the help or to keep us from getting into something else?

  2. We took your idea and ran with it. Tonight we had refried bean and mashed potato/turnip tacos topped with a green chile Cabbage- onion mexi slaw. So yummy. No Dairy-no gluten. Comfort food when you cant have most of the components of comfort food.
