Ginger Omega Cookies
This afternoon, G-man and I decided to puddle around in the kitchen and make up a cookie recipe.

Ginger Omega Cookies are low in sodium and each one contains a tablespoon of flaxseed meal. (What? A tablespoon? Yup.)  G-man and the Cadet have eaten two each, so we must have done something right.



Ginger Omega Cookies


1 cup unbleached, all purpose flour
1 1/2 cups flaxseed meal
1 tsp baking powder
1/2 tsp powdered cinnamon
1/2 tsp powdered ginger
1/2 tsp powdered cloves
1/2 tsp lite salt

1 cup brown sugar
1/4 cup melted butter
2 tbsp molasses
3 tbsp water

granulated sugar

Preheat the over to 375F.

Mix together together the flour, flaxseed meal, baking powder, and spices.

In a separate bowl, mix together the  brown sugar, butter, molasses, and water. Ad the dry ingredients to the wet, and stir until a soft dough forms.

Shape into balls about 1" in diameter, dip in sugar, and place on cookie sheets about 2" apart. Lightly flatten each ball.

Bake for 9-10 minutes. Allow the cookies to cool before moving them from the cookie sheet. Makes two dozen.
